Guest Recipe Blogger: Nourishing Nicola's Never Fail Pancakes

Introducing Nourishing Nicola - a girl who shows us how incredible a plant based diet can be. We are glued to her instagram, and her blog too - with recipes like these buckwheat pancakes - how can we not?

Taken directly from her blog - these are the super easy to follow instructions to creating your perfect pancake.

'I have been making these pancakes for over a year now, and its safe to say they really never fail! They are also vegan, so perfect if you follow a plant based diet, and gluten + refined sugar free! Finally pancakes that are healthy, easy and delicious.

Makes 4-5 pancakes

3/4 cup buckwheat flour
3/4 cup unsweetened almond milk
2 tsp of cinnamon
1 tsp baking soda (use certified GF if needed)
1 large banana (mashed)
Coconut oil for cooking

1. Simply mash your banana and then mix all the ingredients together in a bowl
2. Heat a small fry pan on medium-high with a little touch of coconut oil
3. Spoon the mixture onto the pan using an ice-cream scoop or similar and cook on one side until bubbles start forming around the edges
4. Flip and cook until golden brown

Now its time for TOPPINGS and LAYERS! My favourites include:

Choc PB & J – layer your pancakes with banana coins, and top with cacao PB, warmed raspberries (jam) and more caramelised banana (heat in fry pan with coco oil) (first image)

Tropical – layer with banana coins, and top with passionfruit, figs, coconut flakes and coconut nectar (second image)

Berry Bang Chia Jam – Mix 1/2 cup raspberries and strawberries and heat on the stove top until warm and gooey. Add in 1/4 cup chia seeds and mix until a jam forms! Drizzle with rice malt syrup, peanut butter and layer with more berries (image below).
